Ingredients

For the Filling:

  • 2 pounds (approximately 900 g) boneless, skinless chicken breasts, diced

  • 2 tablespoons olive oil

  • 1 large onion, finely chopped

  • 3 cloves garlic, minced

  • 2 cups frozen peas and carrots

  • 1 cup frozen corn

  • ½ cup butter

  • ½ cup all-purpose flour

  • 2 cups chicken broth

  • 1 cup whole milk

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • ½ teaspoon dried thyme

  • ½ teaspoon dried parsley

For the Crust:

  • 2 pre-made pie crusts (or homemade, as preferred)

Instructions

  1. Preheat the Oven: Set your oven to 425°F (220°C).

  2. Cook the Chicken: In a large skillet over medium heat, add the olive oil. Once heated, cook the chicken until no longer pink. Remove from the pan and set aside.

  3. Prepare the Vegetables: In the same skillet, sauté the onion and garlic until fragrant and translucent.

  4. Make the Sauce: Add butter to the skillet. Once melted, whisk in the flour to create a roux. Gradually add the chicken broth and milk, stirring continuously until the mixture thickens.

  5. Combine Ingredients: Add the cooked chicken, peas, carrots, and corn to the sauce. Season with salt, pepper, thyme, and parsley. Stir well to combine.

  6. Assemble the Pie: Line a 9-inch pie dish with one pie crust. Fill with the chicken and vegetable mixture. Cover with the second pie crust, sealing and crimping the edges. Make small slits on the top crust to allow steam to escape.

  7. Bake: Place the pie in the preheated oven and bake for 35–40 minutes, or until the crust is golden brown.

  8. Cool and Serve: Allow the pie to rest for about 10 minutes before slicing and serving.

Tips for Best Results

  • For a richer flavor, substitute heavy cream for milk.

  • Let the filling cool slightly before assembling the pie to avoid soggy crusts.

  • Customize the vegetables according to your preference.
